Easy Homemade Brownie Recipe

I'm continuing my quest in making the recipes I've pinned on my Pinterest.

Up next brownies!

I was wanting something chocolate and we only have cocoa powder in the house and I'm not about to start spooning it into my mouth.  That probably would not go over very well.

So I turned to the glorious Pinterest and found recipe that was simple and I had everything already in my house.


The recipe is found on I Am Baker site.  She had a brilliant idea of making the dry mix as a gift and including the recipe of the rest of the ingredients and such for the person to finish making it.  I may have to do that.  Its just like using a box mix but I think more personable because you spent the extra time on it. 

  
Dry Ingredients:


  • 1 cup white sugar
  • 1/3 cup unsweetened cocoa powder
  • 1/2 cup all purpose flour
  • 1/4 tsp salt
  • 1/4 tsp baking powder
Wet Ingredients:

  • 1/2 cup melted butter, then cooled
  • 2 eggs 
  • 1 tsp vanilla
*I doubled the recipe and it was still perfect* 

Directions:

  1. Sift together all dry ingredients in a medium mixing bowl. 
  2. Melt butter and set aside to cool slightly. Beat two eggs with the vanilla.  Add to dry ingredients and stir.  Pour in cooled melted butter and incorporate.  Spread batter in a prepared 8-inch square pan and bake for 20-22 minutes at 350 degrees. *since I doubled the recipe I used a 9x13-inch pan and baked it for about 30 minutes, but started checking at 22 minutes.*

It is seriously such an easy recipe.  I am a huge fan of fudge style brownies and this is perfect.  Add a little vanilla ice cream and some chocolate syrup and its a perfect desert for any day or even a special occasion.

Pizza My Heart: MOD

If you know me at all you know that I love pizza.

Its the ultimate food.  It can be eaten for every meal.  Breakfast, lunch, dinner, dessert!!! Seriously, love love love it!

Last weekend Chris and I went out for a date night.  He planned it and wanted to surprise me where we were going.

I was very happy when we strolled up to the newly opened MOD pizza near us.  We both had never been.

OH. MY. GOSH!!!!!

Its probably a good thing we hadn't been before because I would have been throwing my money at them way sooner!

THE PIZZA OH THE PIZZA!!!!!

I got the Tristan: Mozzarella, asiago, roasted red peppers, mushrooms and pesto.  I added pepperoni, & green bell peppers

Chris got the Mad Dog: mozzarella, pepperoni, mild sausage, ground beef. He added Canadian bacon and green bell peppers.




I can't stop thinking about this pizza.  It's changed me.

Please tell me I'm not alone in my love for this pizza.  If you are foolish like me and have waited to go to MOD, GO! Please go and become a changed person. You'll love harder, you'll be smarter, you'll become famous. (it won't do any of those things, but wouldn't that be amazing!)

Its the perfect place for a date night! Even if you have your baby as a third wheel.  :)

What's Up Wednesday



I've decided to get my brain juices working more often (you can only sit and watch netflix for so many hours in a day) so I'm gonna start my own little blog series.

Wednesday is the day were you realized you've survived half the week, but you also have half left till the weekend.

Its an odd feeling day.

So every Wednesday (okay honestly most likely every other Wednesday)  I'm going to post something to get us through the week.  It could be a new recipe I've tried, a funny story I heard or maybe some silly pictures to get you through.

So I though I'd start out this first Whats Up Wednesday with some of my favorite Buzzfeed articles.

I love a good Buzzfeed post and I've had quite a few recently that I've enjoyed.

  • Okay so who else has an obsessed household of Star Wars super fans? Just the other day Chris and I were talking about a theory about Rey, cause seriously WHO IS SHE??!?!?! I came across this fan theory about who she is and I'm like....I don't know but maybe?

  • And finally, this mom is basically a genius and my hero!  I love Target.  Its my sanctuary.  Can I have my 30th birthday party at Target?

5 Months






My sweet little Leonard is 5 months now.

He's growing like a weed and learning so much.

I wish he would learn to sleep better at night faster, but it could be worse.  We've had a few really great nights to make up for the not so great one.

He gets around by rolling and scooting himself places.  I'll put him down then look back over and he's in a different position.  Time to build another baby gate for the stairs.

He has 2 bottom teeth and he's working on a few more.  They are giving him major grief, hence the terrible sleeping at night.

He started eating rice cereal and he is loving it.

Its all good cause he just smiles at you and you forget how tired, burnt out and exhausted you are.

I can't wait to see what this little one learns in the next month.

Simple Soft Pretzel Recipe

Right now I'm going through my Pinterest food board and I'm actually attempting the recipes I've pinned over the years. 

Who even does that right?

Well, I decided I wanted to be that person. 



My younger brother lives in Idaho, going to school there and he had a little pretzel business with a couple other people and when I found that out I was supremely jealous, cause SOFT PRETZELS! 

I have a serious love for them, its unhealthy really.  The obsession become even greater in this last pregnancy. I got the pretzel love bad!

So the other day I decided instead of going to QT kitchen to pick up a pretzel (btw they have good soft pretzels there) for the umpteenth time, I'd attempt making them myself.

I did not expect them to turn out, the recipe I found said I should use a stand mixer but I don't do things that way.  I mix everything by hand so I was leery of the outcome.

If you're like me then I want to let you know that yes, they will turn out and you will be happy you didn't skip out because you don't have a stand mixer.

I got quick Instagram story of my first batch right out of the oven, i wanted to post it but the video is being finicky so here is a crappy screen shot of the video. :) I made a second batch the next day and instead of the usual pretzel shape I made them into pretzel bites.  I've been poppin way too many in my mouth.





Homemade Soft Pretzels

Yields: 8 small pretzels
recipe adapted from Sprinkles Some Sugar
Ingredients:

2 1/4 tsp active dry yeast (1 standard packet)
1 cup warm water
1 tbs unsalted butter, melted
1 tsp sugar
1 tsp salt
3 cups all-purpose flour + up to 3/4 cup more if needed

2 cups water
4 tbs baking soda
1 tbs coarse salt, for sprinkling on top

6 tbs salted butter, melted


Instructions:

Preheat oven to 475 degrees and line a large baking sheet or two baking sheets with parchment paper.

Combine yeast with warm water and sugar in the bowl of your stand mixer fitted with hook attachment. Once mixture becomes "frothy" your yeast is ready. 

Stir in salt and melted butter. Add flour 1 cup at a time until a dough forms and is no longer sticky. You may need more or less depending on temperature differences. If you press your finger into the dough and it bounces back, it's ready to knead. Knead dough for 5 more minutes until smooth and pliable. Form dough into a ball and place it back into the bowl to rest for 15 minutes. During this time, prepare baking soda bath.

In a medium sized pot, boil 2 cups of water with 4 tbs of baking soda. Once the baking soda is mostly dissolved, take mixture off heat and allow it to come down to a lukewarm temperature. Pour into a 9x9 baking dish once cooled down.


At this time, 15 minutes of dough resting time should be up. Take dough out of the bowl and flatten slightly with the palm of your hand. Cut dough into 8 sections (like a pizza). Roll each triangle into a long rope, about 19-20 inches long. Shape dough into pretzel shape and place in baking soda bath for 2 minutes. If the whole pretzel isn't covered by the water, spoon it on top of the areas is doesn't reach. Once the 2 minutes is up, carefully pick pretzel up either by your hand or with the help of a fork and place on prepared baking sheet. You may have to re-shape slightly. Sprinkle the pretzel with coarse salt while still wet (optional). Repeat these steps until all 8 pretzels are prepared and on the baking sheet(s).

Bake pretzels for 8-9 minutes or until golden brown. Immediately from the oven, brush with melted butter.

Hey Mommy Style Monday. "Water" You Up To?

Hello to all!
Its Monday and I am joining in on mommy style Monday again with some rock star moms in the blogasphere!

This time around its all water day!

I've written the book on the perfect places to have a water day, but I confess, I hardly ever take my kids to pools or splash pads. Whoops!

Yes, it the perfect escape from the dreaded heat, but I guess my excuse is my little guy.  Its hard to go to places outside where he can be over heated quickly.  I've tried many times to go to the splash pad not to far from my house, but it just hasn't worked out yet.  I'm determined to go at least once before they close for the season.

We do outside water play around here. Running through sprinklers, water on the trampoline and making mud pies.

Even though its at home we still make sure we have everything we need to make it a fun time.



Sunscreen, water, towels, sunglasses, and of course the most favorite part of water days, otterpops.  

Since we don't leave the house often to cool off I get the luxury of sporting my mom uniform while we play.  On occasion, if I'm getting all in, I'll wear my swim suit but for the most part its baggy tees with leggings.  The ultimate in comfortable play.




But lets be real, I'd wear this out in public too. Just not to Target, I've got a rep to protect.


Little brother is still unsure about the whole water, outside, nature thing, but he's coming around. 


Big brother though is happy to take on any water day duties for both of them.

DanceDance Mermaid Bae

I cant believe I forgot to write about another epic dance party I went to.
Oh wait, yes I can believe it, its called children, school, babies, anger & aggression. The standard stuff.

But I'm here now, trying for the 10th time to write about it. Typing as slow as cold tar with one hand while I wrangle my 4 month old in my lap.

On June 30th I started early getting ready because I knew if I didn't I would be scrambling to leave with enough time to get there on time.

I played around with some make up and ended up going with blue eyebrows, and I'm pretty happy how they turned out.



I wanted to do a simple outfit.  I saw some perfect leggings online and thought about buying a pair, but I'm glad I didn't cause almost everyone had them. I'm glad i wore my jeans, cause pockets to hold my phone. yaaaasssss!

I made a seashell head band, from a basic headband and a pack of seashells i got from the dollar store too.

I had found a sea shell bra at the dollar store so i painted it pink with glitter.  The string was irritating my neck so i decided 10 minutes before leaving to just hot glue the shells on to my white shirt.  So glad i did. It would have been super annoying to dance and have fun with the string digging into my neck.

I wanted to do something fun with my hair and spent way too much of my day completely failing at it. Attempted color hair chalk too. I ended up just wearing it down, then literally 5 minutes in to dancing put it up. Oh well. I think its the effort in trying that matters.

There weren't very many pictures of me dancing this time as there were from the last dance dance party, but at least I got in the photo booth this time. 

I drank some amazing delicious mermaid inspired concoctions from The Soda Shop. YUM! Seriously, so so so good. I may have had 4, or something like that.

It was a great time to get out and dance my cares away. 

Mandy knows how to throw down an awesome party and I can't wait for the next one!
